Ingredients
- 4 Granny Smith Apples
- 3 Tbsp Brown Sugar
- 1 tsp Cinnamon (½ for the syrup and ½ for the french toast)
- 2 tsp Vanilla Extract (one for the syrup and one for the french toast)
- 1 stick Butter
- 2 cups Crushed Corn Flakes
- 8 slices Brioche Bread
- 5 Eggs
- 1 Tbsp Milk, Half and Half or Heavy Cream
- Whipped Cream or Vanilla Ice Cream
- Ghirardelli Caramel Sauce (optional)
Instructions
PREP
- Remove the skins, cores, stems from the 4 granny smith apples an cut the apples into slices.
- Create the cornflake crunch. Crush cornflakes in a plastic ziplock bag until the pieces are medium or small. Transfer the pieces to a shallow, wide bowl.
- Create french toast mixture. Scramble 5 eggs in a shallow, wide bowl. Mix in ½ tsp vanilla extract, 1 Tbsp milk, ¼ cinnamon and a pinch of salt.
- CREATING THE APPLE MIXTURE
- Melt 1 stick butter in a pan on your stovetop on medium heat.
- Add in 1 tsp vanilla extract, 1/2 tsp cinnamon, and 3 Tbsp of brown sugar and a pinch of salt.
- Add sliced granny smith apples and toss.
- Cook the apples until they are soft and there is a beautiful caramel brown apple syrup at the bottom of the pan - around 10-12 minutes. You may need/want to add in additional butter and brown sugar to create more syrup to coat your french toast.
CREATING THE FRENCH TOAST
- Place slices of brioche bread in the french toast mixture to coat.
- Then dip the wet bread into the corn flake bowl to coat 1 side of the bread in crushed corn flakes. About 2-3 slices of bread can fit the pan at a time.
- Transfer the bread to the skillet, corn flake side down and cook for 3-4 minutes or until the corn flake sides looks pretty crispy and brown. Then flip the bread and cook for another 2-3 minutes until the french toast is cooked through.
- Transfer 2 pieces of french toast to a plate. Make sure the cornflake sides are up.Top them with the softened granny smith apples. Use a spoon to gather the apple syrup from the granny smith pan and drizzle it over the french toast as well.
- Add whipped cream or vanilla ice cream to the top or side of the french toast. Then, if you are feeling spicy, drizzle caramel syrup over the plate to make it feel festive.
- Enjoy!
