Ingredients
  

  • 2 English cucumbers
  • 1 cup water
  • 1 cup sugar
  • 1 large bunch basil
  • ½ pint fresh lime juice
  • dash ginger juice (optional)
  • seltzer water, Prosecco, or Cava
  • basil, lime wheel, or cucumber slice for garnish

Instructions
 

Cucumber Juice

  • Peel each cucumber and half lengthwise. Scoop out any seeds and rough chop. Add to food processor.
  • Puree cucumber in food processor until very smooth.
  • Strain cumber juice through 2 layers of cheese cloth set over a strainer into a bowl. Gently squeeze the cheese cloth bundle to extract all juice, discard solids. Yields about 2 cups cucumber juice.

Basil Simple Syrup

  • Bring equal parts water and sugar to a light simmer in a small saucepan. Add a huge bunch of fresh basil, slightly crushing the leaves. Remove from heat and allow to simmer for at least 10 minutes. Chill.

Assemble the Spritz

  • For each spritz, mix 2 parts cucumber juice, 1 part basil syrup, 1 part lime juice, and a dash of ginger juice if using.
  • Poor over ice and top with seltzer water, Prosecco, or Cava. Garnish with basil, lime wheel, or cucumber slice.

Notes

Cucumber juice can be stored in the fridge for up to 3 days. Ginger Juice by The Ginger People can be found at some markets and on Amazon.
