Pollo a la Brasa
Ingredients
- ½ cup beer
- 2 Tbsp soy sauce
- 2 tsp table salt
- 2 tsp yellow mustard
- 1 tsp pepper
- 1 tsp dried thyme
- 1 tsp ground cumin
- 2-3 bone in skin on chicken breasts
- wood chips for grilling
Instructions
- Split chicken breasts in half.
- Whisk beer, garlic, lime juice, soy sauce, salt, mustard, pepper, thyme, and cumin together in liquid measuring cup. Add marinade and chicken to zip top gallon bags and
- Add wood chips to grill and heat to 350°. Pat chicken dry. Grill, turning frequently, for about 20 minutes or until the internal temperature registers 175F .
Aji Verde Sauce
Ingredients
- ½ cup mayonnaise
- 1 jalapeno chile, stemmed, seeded, and chopped coarse
- 3 Tbsp minced fresh cilantro
- 2 Tbsp grated cotija cheese
- 2 Tbsp lime juice
- 1 Tbsp jarred huacatay paste
- 1 garlic clove, minced
Instructions
- Combine all ingredients in blender and process until smooth, about 1 minute. (Sauce can be refrigerated for up to l week.) Makes about ¾ cup
