Green Chili Enchilada Sauce
Ingredients
- 1 Tbsp olive oil
- 1 small onion, diced
- 1 jalapeño, diced
- 4 cloves garlic, minced
- 1 cup chicken stock
- 4 4-ounce cans diced green chiles
- 1½ tsp ground cumin
- 1 tsp salt
- ½ tsp freshly-ground black pepper
Instructions
- Sauté the onion, garlic and jalapeño in a touch of olive oil until soft and cooked.
- Add the onion mixture and all remaining ingredients to a blender or food processor.
- Purée until the mixture is nice and smooth, adjust seasoning if necessary. Makes about 3 cups sauce.
